My friend Delisa shared this recipe on Facebook and I just had to try it. I like to prepare it or another salad for lunch. I have 2 oz of cleanse and one of our YUMMY shakes for breakfast, a couple of snacks from the list below and for dinner, I’ll have a delicious protein smoothie or shake. The lbs are melting off and I feel so much better.
You'll need:
Large head of romaine 15 oz.
1 can of black beans, rinsed and drained
1 large orange bell pepper
1 pint cherry tomatoes
2 cups corn (fresh or frozen, thawed)
5 green onions
Some Cilantro
Optional: avocado
Honey-Lime Vinaigrette
- 1 small garlic clove
- 2 tablespoons lime juice (about the juice of 1 lime)
- 2 teaspoons honey
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder
- salt and pepper to taste
- 2 tablespoons extra virgin olive oil
{Instructions}
The Salad
Firstly, rinse and chop the romaine lettuce, and place it in a large bowl. Then, rinse and slice the cherry tomatoes in half, and add them to the bowl. Drain and rinse the black beans and corn, and add them to the bowl as well.
Next, dice the onion and orange bell pepper then add it to the mix. If you're using avocado, dice it into cubes and add it to the salad. Finally, chop up some fresh cilantro and sprinkle it over the top.
The Dressing
To make the dressing, whisk together lime juice, olive oil, honey, garlic, chili powder, cumin, and salt.
Pour the dressing over the salad, and toss everything together until it's evenly coated. Next, serve and enjoy!
